My favorite way to capture the output of a dying system is via the
serial port.  

You can tell the kernel to send console output to the serial port, use
a null-modem cable to connect the serial port to another computer, and
then use kermit or minicom on the second computer to log the console
messages.

If the system isn't dying, just look in your logs.
